New recipe tonight!

Tonight I tried a new recipe, and it was AWESOME! Turkey burgers with feta cheese and spinach with a tzatziki sauce, served on an Arnold's Sandwich thin. Had some sweet potato fries, too... what a treat!

Here are the recipes:

Turkey Feta Spinach Burgers

Serves 5

Ingredients:
Extra lean ground turkey
4 oz feta cheese
1 1/2 cup chopped spinach
1 egg white
salt to taste
olive oil (optional)

Finely chop fresh spinach, or put in a food processor. Add ground turkey, feta, egg white, and salt to taste. Mix, and separate into 5 patties. These burgers can be grilled on a grill, baked in the oven, or cooked on the stove top with a little olive oil (that's what I did).

  • Total Carbs: 0.6 g
  • Dietary Fiber: 0.4 g
  • Protein: 26.2 g
Tzatziki Sauce (Greek yogurt and cucumber dip)

Ingredients:
2 - 6 oz. containers of Oikos Greek Yogurt (fat free)
1 cucumber (peeled and seeded)
2 cloves crushed garlic
salt to taste

Shred or process cucumber. In coffee filter or paper towel, allow cucumber to sit so excess water can be absorbed and drained away. Then combine cucumber with yogurt and garlic. Allow to sit in refrigerator for at least an hour so flavors can blend.

Number of Servings: 12 (I estimated about an ounce per serving?)

  • Dietary Fiber: 0.1 g
  • Protein: 2.8 g
The rest of my day was on plan... drank a lot of water! About 160 ounces... I just seem really thirsty lately... could be because of working out? I went to the gym even though I had a busy evening planned. I decided that I am just as important as my daughter's homecoming game, or getting the house clean. I did 20 minutes on the elliptical and 20 minutes on the stationary bike. You know, that stationary bike is more of a challenge to me than the elliptical! That is why I keep getting on it... I figure that a challenge is good. And I can definitely feel it!

Watching Biggest Loser... getting pissed off at the green team! What a b*tchy pair! Ok... I won't spoil it for those of you who haven't watched yet...:)

  4. Yummy!! I'm not a meat eater, but I have a black bean burger recipe that I absolutely love and I always serve it with oven sweet potato fries! Delish!

  6. YUM i love sweet potato fries! Are you eating them plain or w/ seasoning? I would love to include some in my diet!
    Man, I didn't get a chance to watch Biggest Loser last night.. b/c I choose to sleep! I was mighty tired! But my mom called me first thing this morning (She lives in Texas, I in CA) and said.. DID YOU WATCH LAST NIGHT? drama drama drama! :)

  7. @Sunny - I have a 32 ounce container that I fill up all day. When I typed this last time, I was finishing my 5th one. I actually drank about 16 more ounces before I went to bed... It's been a while since I had my blood sugar checked. I may just do that.

    @Alex - I eat them plain - just oven baked. Really gets my sweet fix!

  8. Very cool recipes! I'll have to try them out. I'm just now getting in to different cheeses and spinach, I made a big switch and left iceberg lettuce behind, so i am trying all kinds of different foods now! I've lost over 40 pounds with diet and exercise. I blog at Fitness Achievement

  13. Um...yum! Great idea to mix the feta in! Many years ago I was in Greece for two weeks and we had fresh tzatziki every day. Mmmmmm!

    I agree that the green team got way out of control with their attitude. And the whole red team drama was making me mad, too. I like grey team. They were pretty cool to let the red team call home....and the green team. They are the gel holding everyone together right now. Nice boys.

    And Jillian maybe needs to have her hormones checked. LOL
